Recipe

Ingredients

  • 1 kg chicken, cut into serving pieces
  • 8 cups water
  • 2 cups tamarind leaves, washed and chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 cup sliced string beans
  • 1 cup sliced eggplants
  • 1 cup kangkong leaves (water spinach)
  • 2 pieces green chili peppers
  • Salt and pepper to taste

Instructions

  1. In a pot, boil the water and add the chicken. Cook until the chicken is tender.
  2. Remove the chicken from the pot and set aside.
  3. In the same pot, sauté the garlic, onion, and tomatoes until they are soft.
  4. Add the tamarind leaves and continue cooking for 3-5 minutes until wilted.
  5. Add the chicken and pour in the chicken broth. Let it simmer for 5-10 minutes.
  6. Add the string beans and eggplants and cook for another 5 minutes.
  7. Add the kangkong leaves and chili peppers. Simmer for another 2 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot with rice.
