Sinigang sa Miso

Ingredients

  • 1 kg pork ribs or pork belly, cut into serving pieces
  • 8 cups water
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, chopped
  • 2 pieces green chili peppers
  • 1/4 cup miso paste
  • 1 cup sliced kangkong leaves (water spinach)
  • 1 cup sliced radish
  • 1 cup sliced eggplants
  • 1 cup sitaw (long beans)
  • Salt and pepper to taste

Instructions

  1. In a pot, boil the water and add the pork. Cook until the pork is tender.
  2. Remove the pork from the pot and set aside.
  3. In the same pot, sauté the garlic, onion, and tomatoes until they are soft.
  4. Add the pork and pour in the pork broth. Let it simmer for 5-10 minutes.
  5. Dilute the miso paste in a cup of warm water, then add it to the pot. Mix well.
  6. Add the sitaw, radish, and eggplants. Simmer for another 5 minutes.
  7. Add the kangkong leaves and chili peppers. Simmer for another 2 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot with rice.
